Yolélé is about sharing culture, supporting smallholder farmers, and promoting climate-smart agriculture. Introducing fonio, the ancient West African grain!

Established in 2017, Yolélé Foods is a purpose-driven natural food company, and recently launched their first offering to the U.S. marketplace: fonio, an easy-to-cook, ancient African supergrain with three times the protein, fiber and iron of brown rice.

Delicate, gluten-free and nutrient-rich, fonio (pronounced phone-yo) has been grown and celebrated across West Africa for thousands of years and is recognized for its easy digestibility and low glycemic index. It is high in methionine and cysteine, two essential amino acids that are deficient in most other major grains – barley, rice and wheat, to name a few.

KAUNE'S carries the plain fonio grain as well as the pilaf in three flavors: mild Dakar Curry with turmeric and currants; spicy Yassa with onions, chili and lime, and Jollof with tomato and bell peppers. 

Fonio grows freely in the drought- and famine-prone Sahel region of sub-Saharan Africa, where hunger levels are higher than in any other place in the world.

Klatch coffees are born as a result of nurturing relationships with the farmers who grow the beans. It is their belief that the art of Klatch begins right where the seeds are planted. Green buyer and roastmaster Mike Perry painstakingly travels the globe to ensure that they have the first look at the finest results of each harvest. The Klatch commitment is to honest business practices meaning relationships built on trust and loyalty with the farmers they work with. All of this is accomplished through a Direct Trade model and a simple handshake.

After the beans are sourced, they make their way to their home in Southern California where the quest for only the best continues. Mike uses his degree in chemical engineering to achieve a balance of science and artistry Klatch calls “Peak of Flavor” roast style. Simply put, each individual coffee varietal is roasted to its unique peak flavor profile. The care they put into sourcing and roasting has been recognized through many awards throughout the years.

Couple Create New Mexican Alternative to Ketchup

Though they tied the knot just last September, Carmit Levin and Jacob Seidenberg Korn playfully bickered recently about the details of how they had created their new product — ketchup infused with green chile from Hatch — as if they were a seasoned couple.

Asked what triggered the idea to combine green chile and ketchup, the couple agreed on one memory from three years ago this August: Green chile tumbling in a roaster in the Whole Foods Market parking lot near their first apartment in Santa Fe.
Seidenberg Korn has never liked peppers much. “I can’t stand jalapeños,” he said. Yet the two said they quickly became hooked on those green chiles from Hatch.

“We could smell it all day long,” Levin said.
