Spicy Thai Salad
  • 1 lb linguine, your favorite pasta or rice noodles 
  • 2 scallions, sliced about 1/4-inch thick, green portion only
  • 1 red bell pepper, diced into 1/2-inch cubes
  • 1 small cucumber, seeded and diced into 1/2-inch cubes
  • 1 cup Stonewall Kitchen Roasted Garlic Peanut Sauce 
  • 2-3 Tbsp fresh cilantro, loosely chopped 
  • Salt and pepper to taste

Fully cook the noodles according to package,, drain and rinse with cold water. In a large bowl, toss the noodles with all the chopped vegetables and Roasted Garlic Peanut Sauce. Add more sauce if you desire. Salt and pepper to taste. Place pasta and garnish with chopped fresh cilantro.

BLT Salad
  • 6 artisan bread slices, halved
  •  2 tablespoons extra virgin olive oil
  • 1 tsp kosher salt, divided
  • 1 tsp freshly ground pepper, divided
  • 6 thick applewood-smoked bacon slices, chopped
  • 1 sweet onion, halved and sliced
  • 1 pound assorted heirloom tomatoes, cut into wedges
  • 5 oz arugula
  • 1 bottle Brianna's Champagne Caper Vinaigrette or Terrapin Ride Farms Sweet Red Onion White Balsamic Dressing

Preheat oven to 400°. Drizzle bread with oil; sprinkle with 1/2 tsp. each kosher salt and pepper. Bake bread in a single layer in a jelly-roll pan 12 minutes or until golden. Cook bacon in a skillet over medium heat, stirring occasionally, 10 minutes or until crisp. Drain on paper towels; reserve 1 Tbsp. drippings in skillet. Sauté onion in hot drippings over medium-low heat 3 to 5 minutes or until tender. Toss together tomatoes, arugula, bacon, onion, and salt and pepper to taste in a large bowl. Pour dressing of choice over tomato mixture, and toss to coat. Serve immediately with toasted bread.

Bacon & Chipotle Mashed Potatoes​
  • 3 medium baking potatoes
  • 3-4 Tbsp Extra Virgin Olive Oil
  • ½ tsp garlic salt
  • 1 garlic bulb
  • 1 stick (1/2 cup) butter
  • ½ tsp sea salt
  • 1/3 to ½ cup Fischer & Wieser Smokehouse Bacon & Chipotle Grilling Sauce

Wash potatoes and dry thoroughly. Rub with 1 tablespoon extra virgin olive oil each. Place on foil and sprinkle with garlic salt. Close foil and bake 1 hour in 400 degree oven*. Wash garlic bulb and cut top off; remove outermost skin. Place in small baking dish; drizzle 1 tablespoon Extra Virgin Olive Oil over top of cloves. Cover top of dish with foil. Roast in 375 degree oven 45 minutes. Before removing potatoes from foil, smash moderately to break up somewhat (cover hands with oven mitt). Transfer to mixing bowl. Add butter. Remove roasted garlic from baking dish and squeeze cloves on top of buttered potatoes. Add salt and grilling sauce. Mix well.
